A proper chai on a base of malty Assam black tea, the variety they use in the chai houses of India because it holds up to milk and spice instead of disappearing under them. It carries cinnamon, cardamom, cloves, and ginger, warming and complex without being fussy about it.
Brew it strong. Add milk. That is the classic for a reason.
How do I brew Classic Chai?
Steep 1 tablespoon of Classic Chai in 8 oz of hot water for 5 to 7 minutes. For a richer cup, simmer it in equal parts water and milk for 5 minutes, strain, and sweeten to taste. The Assam base is built for that treatment. It gets better with milk, not worse, which is not true of every black tea.
