A proper chai built on a base of malty Assam black tea, the variety traditionally used in Indian chai houses because it holds up to milk and spice without disappearing. We blend it with cinnamon, cardamom, cloves, and ginger for a cup that's warming and complex without being fussy.
Brew it strong. Add milk. That's the classic for a reason.
How to Brew
Steep 1 tablespoon in 8 oz of hot water for 5 to 7 minutes. For a richer cup, simmer in equal parts water and milk for 5 minutes, strain, and sweeten to taste. The Assam base is built for this treatment. It gets better with milk, not worse.
